Tunisian recipe of Brique à l’oeuf

Before I was born, my parents lived in Tunisia for three years and this is one of the yummy dishes they brought back from their travels!🥰 Food can be fun when you have diabetes!

Diabetes & yummy recipe: “Brique à l’oeuf” can be ready in five minutes only, you just need to have everything ready to start. Enjoy it with a salad for lunch or a snack! You will see, it is delicious but don’t have more than 2 small eggs or your blood sugar will go up after 3 hours (fat-protein index)

Ingredients

  • Sheets of brick 
  • eggs
  • capres
  • tuna
  • salt and pepper
  • parsley
  • I am using 1/2 cup of sunflower oil

Directions

  • Put some vegetable oil in a pan and put on full heat
  • Detach the sheet of brick from its parchment paper
  • Put on a flat surface
  • break an egg
  • Salt and pepper
  • add parsley, or you can make it with tuna and capers. Your choice.
  • Enjoy with rocket salad!

Diabetes & Carb content:

  • One sheet of brick equals. to 1R or 10g carbs
 
 👉Be aware that if you eat 2 eggs, your blood sugar might go up after 3 hours (fat-protein index)
 
👉If you do not use all of the sheets, close the packet with celetape to make sure air doesn’t get in. Otherwise it will dry the sheets and they will brake.
