Asian quinoa protein salad with crunchy vegetables recipe

Introducing one of my favourite quinoa salad! Full of protein and low GI, perfect for diabetes and a stable blood sugar!🥰

Diabetes & yummy recipe: This is very easy to put together, especially if you are using frozen quinoa bags (see recipe below). This is an all round perfect dish with protein from quinoa and chicken, super vegetables and crispy bean sprouts. Yummy! 

Ingredients

  • 2 chicken thighs, no skin
  • 40g of cooked quinoa
  • 5cm ginger
  • 1 red chilli
  • 1 clove of garlic
  • 2 tbsp fish sauce
  • Juice of one lime
  • 100g green beans
  • 100g baby tomatoes
  • 50g bean sprouts
  • 20g coriander
  • 20g mint

Directions

  • Cook the chicken first, get rid of the skin
  • put in boiling water until cooked (make sure it is done)
  • Shred the chicken, put aside 
  • Use one bag of quinoa bag of 10g carbs
  • Set up your salad, add the quinoa and chicken
  • Add the haricot beans, tomatoes, beansprouts
  • Add chopped mint and coriander
  • For the Asian dressing, take a bowl, add grated ginger, red chilli, 1 clove garlic, fish sauce and lime
  • Mix well
  • Add the dressing to the salad and mix again
  • Enjoy!

Diabetes & Carb content:

  • This Asian quinoa salad is for one person with one bag of quinoa. It contains 1,8R or 18g carbs.
  • Remember that if you use 300g of vegetables, it will correspond to 1R or 10g carbs.
